Enjoy Our Refreshing Riesling
Parallax Organic Riesling truly reflects the warm gravelly terroir where the vines produce their fruit. Fermented dry, the nose exhibits the perfumed aromatics that this variety is
famous for. The palate is fruit driven with grapefruit, limes and some sweeter stone fruit evident.
At 11% alcohol, a racy backbone of acid gives it length and longevity. Careful cellaring for a few years will produce a golden wine with toasted honey notes.
Relax with Our Elegant and Refined Pinot Noir
Parallax Organic Pinot Noir perfectly expresses the terroir of our warm dry site. At 13.6 % alcohol, the style of our wild fermented Pinot Noir is unashamedly Burgundian. The colour is deep cherry red with an aubergine rim, leading to a mild palate of juicy dark cherries and earthy complexity. The well-balanced acid and textural tannins provide good length and give way to a peppery spice finish. The wine is hand-made using traditional wine making techniques in old Hungarian Oak Puncheons. 14 months of ageing in 1 and 2-year-old French oak completes the process. Further cellaring will see the wine continue to grow in complexity.
